Kale Salad Recipe

One friend wanted to add a salad that marinates in it’s dressing, check it out!  Let us know how you like it…

None

 

Ingredients

 

1 whole head of Russian Kale or Red Kale, (both work use the kind you like)

 Sprinkle of Celtic sea salt OR Himalayan crystal salt (I do to taste)

1-2 Tablespoons of olive oil

1 ripe avocado

2 large tomatoes OR a handful of baby plum tomatoes

1 -2 chopped scallions

1 whole fresh lemon juice

 

Directions

 

De-stem kale and cut up into strips (or chop)

Add 1-2 tablespoons of olive oil plus a small sprinkling of sea salt, to taste (or any type of salt you like) to the kale. Massage well into the leaves until they are soft. If they need more oil, add accordingly.

Chop up 1 avocado into small pieces, add to the kale and massage in well, coating the leaves. It is fine to leave pieces of avocado sitting amongst the leaves as well as coating them.

Chop tomatoes into small cubes or use cherry tomatoes and cut in half’s and add to bowl.  Chop and add Scallions and lemon juice.  Mix all ingredients well by hand make sure that all ingredients are spread evenly through out the bowl.

Sun Flower seeds

Sun Dried Tomatoes
