Chia Pudding
Around our house, we have been working on hydration. We’ve rediscovered chia!
Chia seeds, best known for the chia pet of the 80′s, is an amazing little seed… A superfood, actually!
Chia’s use in South America has been traced back to 3500 BC. It’s hydrophilic action can absorb more than 12X it’s weight in water which makes it incredibly good at helping us to stay hydrated. As if that wasn’t enough of a good reson to add chia to your diet, it has other benefits as well. It is about 20% protein and has more Omega-3 fatty acids than any other plant food.
It makes a FAB pudding. The great thing about chia seed is that it absorbs the flavor of whatever it’s soaked in! Here’s what I made today:
Chia Seed Pudding:
3/4 C chia seed
2 C almond mylk
1/2 t. cinnamon
1/4 t. nutmeg (freshly grated is best!)
Blend the almond mylk and spices, then stir the chia seeds in. Stir about every 5 minutes. After about 30 minutes it will be completely gelled and ready to eat
I like to serve it with an additional dash of almond mylk over it and a little agave nectar for sweetness if needed.
This would also be amazing with many other flavors, such as cacao (raw chocolate). For a more gourmet pudding, you could try
