This is one of my favorite salads of late. I learned recently that in order to release the iron in spinach, it needs vitamin C present! This is one of my solutions to this dilemma…
Citrus Pom Salad
Ingredients:
1 cup spinach (chopped)
1 cup lettuce (chopped)
1 orange (peeled, bias cut pieces)
1/4 cup pomegranate seeds
1/4 cup raw cashews
1/2 Tbs chia seeds
1 cup lettuce (chopped)

Preparation:
Combine and enjoy
No need for dressing!

This is surely a must try recipe. I really love salads, I eat almost all kinds of fresh salads.
