<p><span style="color: #000000;">Chia seeds, best known for the chia pet of the 80&#8242;s, is an amazing little seed&#8230; A superfood, actually!</span></p>
<p><span style="color: #000000;">Chia&#8217;s use in South America has been traced back to 3500 BC.  It&#8217;s hydrophilic action can absorb more than 12X it&#8217;s weight in water which makes it incredibly good at helping us to stay hydrated.  As if that wasn&#8217;t enough of a good reson to add chia to your diet, it has other benefits as well.  It is about 20% protein and has more Omega-3 fatty acids than any other plant food.</span></p>
<p><span style="color: #000000;">It makes a FAB pudding.  The great thing about chia seed is that it absorbs the flavor of whatever it&#8217;s soaked in!  Here&#8217;s what I made today:</span><br />
<span style="text-decoration: underline; color: #000000;">Chia Seed Pudding:</span></p>
<p><span style="color: #000000;">3/4 C chia seed</span></p>
<p><span style="color: #000000;">2 C </span><span style="text-decoration: underline;"><a href="http://freshblessings.net/2009/06/almond-mylk-my-way/" target="_blank"><span style="color: #0000ff;">almond mylk</span></a></span></p>
<p><span style="color: #000000;">1/2 t. cinnamon</span></p>
<p><span style="color: #000000;">1/4 t. nutmeg (freshly grated is best!)</span></p>
<p><span style="color: #000000;">Blend the </span><span style="text-decoration: underline;"><a href="http://freshblessings.net/2009/06/almond-mylk-my-way/" target="_blank"><span style="color: #0000ff;">almond mylk</span></a></span><span style="color: #000000;"> and spices, then stir the chia seeds in.  Stir about every 5 minutes.  After about 30 minutes it will be completely gelled and ready to eat <img src='http://freshblessings.net/wp-includes/images/smilies/icon_biggrin.gif' alt=':D' class='wp-smiley' /> </span></p>
<p><span style="color: #000000;">I like to serve it with an additional dash of </span><span style="text-decoration: underline;"><a href="http://freshblessings.net/2009/06/almond-mylk-my-way/" target="_blank"><span style="color: #0000ff;">almond mylk</span></a></span><span style="color: #000000;"> over it and a little agave nectar for sweetness if needed.</span></p>
<p><span style="color: #000000;">This would also be amazing with many other flavors, such as cacao (raw chocolate).  For a more gourmet pudding, you could try</span></p>
